Puntarelle, anchovy, oil, sumac

Ingredients

• one head of puntarelle
• anchovies
• garlic
• oil
• sumac
• a thread of lemon

Method

1. Puntarelle in iced water. Sauce: anchovy, garlic, oil.
2. Sumac raw, in place of some lemon. Do not cook it.
